Vegetarian Taco Salad
This Vegetarian Taco Salad is a refreshing and satisfying meal that's packed with flavor and nutrients. It's a perfect combination of quinoa, black beans, fresh vegetables, and zesty toppings. Customize it with your favorite sauces and enjoy a delightful vegetarian meal.
Ingredients:
- 1 cup of cooked quinoa
- 1 can of black beans, drained and rinsed
- 1 cup of corn kernels fresh or frozen
- 1 cup of cherry tomatoes, halved
- 1/2 cup of red onion, finely chopped
- 1/2 cup of bell peppers red, yellow, or green, diced
- 1/2 cup of shredded lettuce
- 1/2 cup of shredded cheddar cheese
- 1/4 cup of fresh cilantro, chopped
- 1/4 cup of sliced black olives
- 1 avocado, diced
- 1/4 cup of sour cream optional
- 1/4 cup of salsa optional
- Salt and pepper to taste
- 1 lime, for garnish
Instructions:
Cook the quinoa and put it in a large salad bowl
Add the black beans, corn kernels, cherry tomatoes, red onion, bell peppers, and shredded lettuce
Throw the ingredients in a bowl and mix them well
Add the chopped black olives, fresh cilantro, shredded cheddar cheese, and diced avocado to the salad
Add salt and pepper to the salad as needed
For extra flavor, you can drizzle sour cream and salsa over the top if you want to
Add lime wedges to the salad to finish it off
