Chocolate Chip Cookie Dough Cake
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup chocolate chips
- 1/2 cup mini chocolate chips
- 1/2 cup chopped walnuts optional
- For Cookie Dough Filling:
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup mini chocolate chips
Instructions:
Preheat the oven to 350F 175C
Grease and flour two 9-inch round cake pans
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt
Set aside
In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy
Add the eggs one at a time, beating well after each addition
Stir in the vanilla extract
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients
Fold in the chocolate chips, mini chocolate chips, and chopped walnuts if using
Divide the batter evenly between the prepared cake pans
For the cookie dough filling, in a separate bowl, beat the softened butter, granulated sugar, and brown sugar until creamy
Mix in the milk and vanilla extract
Gradually add the flour and salt, beating until well combined
Stir in the mini chocolate chips
Drop spoonfuls of the cookie dough filling onto the cake batter in each pan
Using a knife, gently swirl the cookie dough filling into the cake batter
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean
Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely
Once the cakes are completely cool, assemble the cake by placing one layer on a serving plate, adding a layer of cookie dough filling, and then topping it with the second cake layer
You can optionally frost the cake with chocolate buttercream or serve it as is
