Lentil Quinoa Salad with Feta Cheese



This Lentil Quinoa Salad with Feta Cheese is a delightful summer side dish that combines the nutty flavors of lentils and quinoa with the creaminess of feta cheese, all tossed in a zesty lemon garlic dressing.

Ingredients:

  • 1 cup green lentils, rinsed and drained
  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup diced red onion
  • 1/4 cup diced cucumber
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

Bring 2 cups of water to a boil in a medium-sized saucepan

Put the rinsed lentils into the boiling water

Then lower the heat, cover, and let the lentils simmer for 20 to 25 minutes, or until they are soft but not mushy

Get rid of any extra water

Put the quinoa and 2 cups of water in a different saucepan

Slowly raise the heat, cover, and let it cook for 15 to 20 minutes, or until the quinoa is done and the water is absorbed

Use a fork to fluff it up

The cooked lentils, quinoa, feta cheese, chopped parsley, diced red onion, diced cucumber, and cherry tomatoes should all be put in a large bowl together

Salt and pepper should be mixed with the olive oil, lemon juice, minced garlic, and whisked together in a small bowl

Add the salad ingredients to the dressing and gently toss to mix

Put the salad in the fridge for at least 30 minutes before you serve it

As a cool summer side dish, serve
