Vegan Chicken Sopas



This vegan twist on the Filipino classic Chicken Sopas is rich, creamy, and comforting. It's packed with hearty vegetables and plant-based chicken strips, simmered in a flavorful broth with macaroni pasta.

Ingredients:

  • 1 package vegan chicken strips
  • 2 cups macaroni pasta
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 medium potato, peeled and diced
  • 1/2 cup frozen green peas
  • 6 cups vegetable broth
  • 1 cup unsweetened plant-based milk
  • 1/4 cup nutritional yeast
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

In a large pot, heat olive oil over medium heat

Add diced onion and minced garlic, saut until fragrant

Add vegan chicken strips, carrots, celery, and potato

Cook for 5 minutes

Pour in vegetable broth and bring to a boil

Add macaroni pasta and simmer for 10-12 minutes or until pasta is tender

Stir in green peas, plant-based milk, and nutritional yeast

Season with salt and pepper to taste

Simmer for another 5 minutes

Serve hot and enjoy!
