Light Crab Salad with Mayo Dressing



This light crab salad with a mayo dressing is a refreshing and delicious dish that's perfect for a light lunch or dinner. The lump crab meat is combined with crisp cucumber, red bell pepper, and fresh herbs, all dressed in a tangy and creamy mayo dressing. It's a delightful and healthy option for seafood lovers!

Ingredients:

  • 8 oz lump crab meat
  • 1/2 cup diced cucumber
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped green onions
  • 1/4 cup light mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Lettuce leaves for serving

Instructions:

In a large bowl, combine the lump crab meat, diced cucumber, diced red bell pepper, chopped fresh parsley, and chopped green onions

In a separate small bowl, whisk together the light mayonnaise, lemon juice, Dijon mustard, and season with salt and pepper to taste

Pour the mayo dressing over the crab salad mixture and gently toss until everything is well coated
