Keto Refined Sugarfree Lemon Curd - Emma Eats

Ingredients:
- 4 large eggs
- 1 cup powdered erythritol
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 cup unsalted butter, cubed
Instructions:
Whisk the eggs and powdered erythritol together in a saucepan until they are well mixed
Then whisk in the lemon juice and zest until the mixture is smooth
Put the pan on low heat and add the cubed butter
Keep stirring the mixture until the butter melts and it starts to get thicker
Mix it up and keep cooking for another 5 to 7 minutes, or until it coats the back of a spoon
Take the pan off the heat and use a fine-mesh sieve to strain the lemon curd
This will get rid of any bits of cooked egg or zest
Put the lemon curd that has been strained into a clean jar or container
At room temperature, let the lemon curd cool down
Then, put it in the fridge for at least one to two hours to thicken even more
After it's been chilled and set, serve and enjoy!
