Mini Cauliflower Pizza
Ingredients:
- 2 cups cauliflower rice
- 1 egg, beaten
- 1/2 cup shredded mozzarella cheese
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 1/4 cup tomato sauce
- 1/4 cup shredded Parmesan cheese
- 1/4 cup sliced cherry tomatoes
- 1/4 cup sliced black olives
- 1/4 cup sliced red bell pepper
- 1/4 cup sliced mushrooms
- Fresh basil leaves for garnish
- Salt and pepper to taste
- Olive oil for greasing
Instructions:
Preheat your oven to 400F 200C
Place the cauliflower rice in a microwave-safe bowl, cover with plastic wrap, and microwave on high for 4-5 minutes, or until tender
Let it cool slightly
Using a clean kitchen towel, squeeze out as much moisture as possible from the cauliflower rice
In a mixing bowl, combine the cauliflower rice, beaten egg, shredded mozzarella cheese, dried oregano, garlic powder, salt, and pepper
Mix well
Line a baking sheet with parchment paper and lightly grease it with olive oil
Divide the cauliflower mixture into small portions and shape them into mini pizza crusts on the prepared baking sheet
Bake in the preheated oven for 20-25 minutes, or until the crusts are golden brown and firm
Remove the cauliflower crusts from the oven and let them cool slightly
Spread a thin layer of tomato sauce over each cauliflower crust, leaving a small border around the edges
Sprinkle shredded Parmesan cheese over the tomato sauce
Top the mini pizzas with sliced cherry tomatoes, black olives, red bell pepper, and mushrooms
Return the pizzas to the oven and bake for an additional 10-15 minutes, or until the toppings are heated through and the cheese is melted and bubbly
Garnish with fresh basil leaves before serving
