Candy Cane Cookies
Ingredients:
- 1 cup butter, softened
- 1 cup confectioners' sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- teaspoon peppermint extract
- Red food coloring
- cup finely crushed candy canes
- cup granulated sugar
Instructions:
In a large bowl, cream together butter and confectioners' sugar until smooth
Beat in vanilla extract and peppermint extract
Gradually mix in flour until dough forms
Divide the dough in half
Add red food coloring to one half, kneading until color is uniform
Cover both dough halves and refrigerate for about 30 minutes
Preheat oven to 375F 190C
Take a small amount of dough from each color and roll into 4-inch ropes
Twist one red and one white rope together and shape into candy cane curves
Place candy canes on baking sheets lined with parchment paper
Bake for 9-11 minutes or until lightly golden around the edges
While the cookies are baking, combine crushed candy canes and granulated sugar in a bowl
Remove cookies from the oven and immediately sprinkle with the candy cane mixture
Allow cookies to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely
